Our news

In 2014, after a reproduction period blessed with excellent conditions, our oysters are feeding and growing remarkably well.

Their flesh rate is getting to be truly exceptional.

We are on our way to a vintage oyster year !!

Are oysters healthy?

They are almost ideal!

A low calorie product (only 68 kcal per 100 gr), they contain very little lipids and cholesterol....huitre-barrau
...but they are rich in proteins and iodine, and can satisfy nearly 100% of your daily needs in vitamins (B1, B2, B3, B12, D, A and E) and amino acids; they also contain high quantities of iron and a variety of minerals such as: phosphorus, potassium, calcium, selenium, manganese, copper, zinc and sodium.
So, oysters are considered healthy for all, even for those who are trying to lose weight or are on a cardio-vascular diet.
Please note that they are not recommended for people with high blood pressure, excess of uric acid or on a low sodium diet.


Worth remembering

Oysters are a pure product of the sea and as such possess its unquestionably invigorating, revitalizing and therapeutic virtues. They even used to be prescribed to cure children with poor health. They contain many elements essential to the body....including aphrodisiac virtues ! And, above all, they taste so good!


How to keep them fresh.

L'huître Pierre Marie BarrauOysters can keep for up to 10 days if, and only if, you respect some rules:

  • temperature must be between 5°C and 15°C
  • in wintertime, they can be kept outside
  • the bottom part of your fridge is the best solution
  • they are even better-tasting 2 or 3 days after having been collected from the claires
  • keeping them tightly packed in their wooden box ("la bourriche" in French) helps them stay fresh longer.


The art of serving oysters.

huitre-Tina Phillips-FreeDigitalPhotosSeveral solutions will provide intense pleasure, it really is up to you: plain, with a squirt of lemon juice (just put lemon slices on the plates), or a dash of shallott vinegar.
Open them about half an hour before serving, and get rid of the water inside. The oysters will then refill with their own liquid reserve which is even better-tasting.
Please chew before swallowing so as to fully appreciate the flavour. Serve with slices of rye bread, whole bread or nut bread with a spread of salted butter.
And of course, maximum pleasure will be achieved if chilled dry white wine or champagne (brut) is on your table too!
